heart healthy carrot cake


Toast 'ems.
A generous helping of brain food.
Half a cup or more if you'd like.
Chopped roughly.


Rabbit food.


Baking supplies. 


2.5 cups of grated carrots.
Pat dry with kitchen towels.


Half a cup of canned pineapples.
Diced and drained.


Beat four eggs together with 1.5 cups of canola oil and 2 cups of sugar.
Caster sugar.


Icing sugar is far too fine and makes the mixture all too gooey.
Lesson learnt.
Tip: If you don't have caster sugar on hand, pulse the normal sugar in a food processor a few times and you should get sugar that's a bit more fine. :)



Fold in sieved flour mixture.
That's 2 cups of all purpose flour, a teaspoon of salt, 1 teaspoon cinnamon powder and three quarts of a teaspoon of nutmeg and 2 teaspoons of baking soda and baking powder each.
Then mix in the grated carrots, diced pineapples and walnuts.


All ready for the oven!
180 degrees for 45 minutes.
Watch the top though, they brown quickly but it doesn't mean the cake's done.
Test it with a skewer.
Till it comes out clean :)


Option to add in raisins too.
Eat well! :)

sunday tunch @ clementi food centre & market


chicken cutlet from tanglin halt western food stall.
needs no further introduction.
it's been reviewed to death.


and perhaps it's just me but the sauce...
was not ideal at all.
i don't know if it was supposed to be bbq sauce
but it was sickly sweet.
and drizzled over my cutlet just makes for a soggy mess.
hmm.
i did hear the customer behind me request for black pepper sauce instead though.


and this was just a couple of stalls down.
I don't think it's the famed one that everyone talks about.
but I didn't take note of the unit number.
It sells carrot cake only in the p.m. though.
this was good.
full on egg.
preserved radish and
the chilli was just what I was looking for.
not excessively spicy just that bit of hot.
soft carrot cake. I'm not sure if it had radish though.
I doubt it.
craving was entirely satisfied. :)

and he grabbed a couple of smoothies for just a dollar each.
banana mango and banana apple.
both were yummydelish!


and because we packed chwee kueh home,
i suppose only rojak would go well with the nibble snack.
you can opt for the ingredients you want
and just state the price you'd like.
anything without vegetables for the kid please.
this elderly man works like clockwork.
he has a certain rhythm to his body and movements.
it was like a routine he had practiced his entire life.

Eating Out. In the Area.


Both of these stalls are good but of course. Nothing draws the crowds to this corner coffee shop like the carrot cake.
This living legend, Mr Ngerng has been featured in Sunday Life! in their series on heritage hawkers and on Makansutra Raw in celebration of Asian food cultures, bestowed with the title of Makansutra Street Food Master. 
 

Make your order of carrot cake, black or white and they will arrive at your table generously fried with headily fragrant bits of preserved radish, pieces of radish cake and well fried egg mixture. All this with a dash of colour from crunchy spring onions.
I don't mean to burst your bubble but...
To be honest, this visit left us disappointed.
The $3 version differed minimally from the $2 order. The radish cake pieces were a lot more firm than they used to be. And I've heard that's because he's no longer making the radish cake himself but has outsourced this labourious process.
I used to really love this.
But I guess.
Things do change.


Now this is a recent addition.
Probably a year or so?
They do a good sized briyani for $5 with side salad, briyani rice, choice of meat and two pappadums.
Tonight though, we tried the Indian Rojak.
Refried things are terribly unhealthy but hey,
I only live once. :)
Very reasonably priced at $2.60 for three items.
The sauce was good. Served hot and chunky with peanut bits.
The one thing that gets me though, is the colouring and starch content of this sauce.
Did I also mention that the prata at this stall goes for 70 cents for a plain prata?
Where would you find prices like that these days?


And just as a warning. Do not order these staples from the zi char stall.
They were nightmares.
Fried rice and fried noodles were all uninspiring.
Lacking flavour but huge on oil.
I'd rather eat indian rojak anyday.

delicious @ scotts square

With seven outlets in KL and Penang enjoying homegrown success,
this flagship outlet at Scotts Square in Singapore is the Eastern & Oriental Berhad Group's
first foray of its Delicious cafe into our shores.

The glass enclosed cafe with their robin's blue egg colored namesake sports a brick front facade.
It offers a contemporary dining atmosphere in a soothing turquoise and white themed interior with added quirks like birdcages and stylised trees. Very much like how their cafes are styled in Malaysia.

The menu has an East West fusion that give diners a wide range of choices at affordable prices. We are talking about deep dish pizzas to pastas and local delights like their famous Nasi Kerabu.


A hearty offering of grilled chicken covered with red curry, this savoury dish will leave you wanting more. :) And unfortunately, seems as if it's the -only- reason for a return visit, if ever.


This seriously delicious cheeseburger was seriously generous but definitely not as delicious as its namesake. It looked like an awesome choice. With fresh greens, a thick patty covered with melted cheese slice, side salad and fries. However, the beef patty was dry and tasted more of panko than actual minced beef which would account for its lack of juicy bite. The onion relish was well done but too little for my liking. The house dressing would have been better off served at the side. The shoestring fries were a good accompaniment for munchers, especially when the patty would probably be left unfinished. Hmm.


Now I havent had a terrible carrot cake yet. But this just about takes the cake (pun totally intended).
The cream cheese icing was heavy on butter which has a very oily aftertaste.
The cake was crumbly and way too dry.
This was a disappointment and not my sweet ending.


This sticky date pudding was served warm, separate from the vanilla ice cream and the thick, dense caramel sauce. The ice cream was in first sight, definitely one off the supermarket shelves and leaves me little to speak off. The sticky date pudding was served warm in a ramekin. There were no pieces of dates but probably minced and mixed into the batter. I'd much prefer pieces of dates for that extra bite. The caramel sauce was thick, a little too much for our palates. This was sticky indeed and overly sweet.

The atmosphere was brilliant. Quiet with ample seating in a relaxed atmosphere. But if the standards of their food and cake offerings continue as such, it'll only remain a novelty and will no see repeats in customer visits. At least not for me. Perhaps only for the nasi kerabu though. :) I do hope to see the delicious cafe see through their aim of another two new outlets in Singapore living up to the delicious standards of their namesake.

Chomping down at Chomps.


Haven't been here in a while. Che Jian/ Chia Keng Hokkien Mee has shifted their location to the second stall on the left hand side of the hawker centre complete with a brand new signboard. Today's beehoon didn't seem to have spent enough time in the wok to fully absorb the stock so that made it lacking in taste somewhat. Perhaps just this batch that he fried. Lard toppings were crunchy as usual with their brilliantly complementing sambal chilli that I always need an extra spoonful of.




Carrot cake was good although a little heavy on the salt and prawns fried to death from being the hot frying plate too long. I'd only order the white version at this stall though. The black version isn't as tasty as in other places I've tried. That's just my personal take on it.


Satay beehoon. Looking a lot nicer than it tastes. The serving size was pathetic at a cost of $4. And what made it worse was that it was served lukewarm. Hmm. I expected the beehoon to have been blanched once more and the satay sauce to be well heated. Expectations. Oh well.

Was good dining out with the notsolittle brother.


And Christmas IS coming right up! :)
Makes me happy just seeing this on the racks at the NTUC outlet in myVillage at Serangoon Gardens.

Saturday's brunch from the heartlands- dover market's carrot cake. A delightful mess of terribly imbalanced proportions of eggs (more) and carrot cake (less) and no complaints of course ;) Packed with a fiery punch and complete with a generous serving of chai poh.

chasing away the school blues


Being back at work on Tuesday was not news well received by my physical, mental nor emotional health.

This was a lifesaver. A densely packed carrot cake.

Not with glutinous rice flour but with white radish shreds that were apparent in every bite. Strips of preserved sausages and a handful of dried shrimp, well fried to impart that deliciously savoury taste to the otherwise bland white radish. Topped with a drizzle of sesame oil, sweet sauce and a dash of toasted white sesame seeds.

Hello supplementary classes till 3pm. I fear you not. :) 


Then there was more at home for dinner! Not carrot cake of course.

This is grandma's mushroom chicken rice one pot wonder.

First, smashed knobs of ginger are fried till fragrant in sesame oil.
Then add the chicken to the wok. Dark/ Light Soya sauce to taste. Note: I use mushroom sauce to avoid using too much soya sauce. Stir fry till half cooked.
Add thickly sliced chinese mushrooms and leave to boil till the liquids have almost all been absorbed.
Transfer into rice cooker, mixed well with uncooked rice.
Stir the ingredients with rice once in a while to ensure all grains of rice have been sufficiently coated with gravy. And leave till rice is cooked. The smell. Is enough to whet any appetite.
And I guess what's left is to...

Simply. Enjoy.
